Vegan Mango Chia Seed Pudding | Chia Pudding with Mango

Ingredients
  • Mango pulp - 2 cups
  • Coconut milk - 2 cups (500 ml)
  • Raw chia seeds - ¼ cup + 2 tbsp
  • Sweetener of your choice as per taste - Sugar, Honey, Agave Syrup, Maple Syrup
  • Freshly cut mangoes to serve
Instructions
  1. In a mixing bowl, add coconut milk and raw chia seeds. Mix the chia seeds with the milk using a spoon stirring slowly making sure all the chia seeds go inside the liquid.
  2. Cover the bowl and chill in the refrigerator overnight.
  3. Next day, take the bowl out and slowly stir the chia seed pudding. By now, the chia seeds have swelled up and become thick and creamy.
  4. Now you have to add the sweetener. If your bowl is large enough, add the sweetener of your choice to the same bowl.
  5. Using a fork or a wire whisk, evenly mix the sweetener making sure that it is distributed uniformly within the chia pudding.
  6. Once the chia pudding is nicely sweetened, put it back in the refrigerator while you prepare the mangoes.
  7. Wash the mangoes well. Then cut the sides of the mangoes and scoop out the flesh using a spoon.
  8. Put the mango flesh to a blender and blend them for a good 2 to 3 minutes to get a smooth, thick, creamy & lump-free mango pulp/puree. Do not add any water.
  9. Now it’s time to assemble your vegan mango chia seed pudding. Take a single serving transparent bowl or glass or cup.
  10. First, add 3 to 4 tablespoons of chia pudding to the serving glass or more depending on the size of your serving.
  11. After you are happy with the quantity of chia pudding, level it evenly using a spoon.
  12. Now slowly & carefully drizzle the mango pulp or puree on top of the chia pudding.
  13. Assemble more servings similarly and then chill them in the refrigerator again before serving.
  14. Before serving, cut fresh pieces of mangoes in small bite sized pieces.
  15. Take out the chilled mango chia seed pudding, top each serving glass with fresh cut mangoes, garnish with a fresh mint leaf and serve immediately. Enjoy!
