Ingredients
  • Udon noodles - 600 gms (3x200 gms packet)
  • Prawn/shrimp - 250 gms, peeled & deveined
  • Garlic - 8 to 10 closed, finely chopped
  • Chinese cabbage - 2 cups, sliced
  • Sunflower oil / canola oil - 4 tbsp
  • Soy sauce - 4 tbsp
  • Oyster sauce - 6 tbsp
  • Sugar - 2 tsp
  • Red chilli powder - ½ tsp (optional)
  • Spring onion greens - ½ cup, finely chopped
Instructions
  1. Boil salted water in a large pot. After the water comes to boil, reduce heat to minimum and drop the udon noodles cakes carefully into the water.
  2. Using a fork gently separate the noodles and as soon as they have come apart, transfer the noodles to a colander to allow all excess water to drip off.
  3. Drizzle a little bit of cooking oil on top to ensure that the noodles do not stick to each other. Set them aside until needed.
  4. Now warm up a wok until it is very hot. Then add the oil of your choice and let it smoke.
  5. Now reduce the heat to medium and add the sliced Chinese cabbage. Stir fry the cabbage until they start to get charred on the edges.
  6. At this stage add half of the sugar and half a tablespoon of soy sauce reserving the rest for later. These two will help in enhancing the smokiness of the cabbage.
  7. Stir fry the cabbage for another couple of minutes or until they are golden brown. Then add chopped garlic and stir fry them for half a minute.
  8. Now it’s time to add the prawns. Continue stir frying the prawns with cabbage & garlic until they are completely opaque and cooked through.
  9. Finally it’s time to add noodles and all the remaining ingredients - oyster sauce, remaining soy sauce and remaining sugar.
  10. Toss everything together using 2 stirring spatula if needed, being careful not to break the noodles.
  11. Stir fry the garlic prawn udon noodles for 2 to 3 minutes until the sauce has thickened.
  12. Now sprinkle the spring onion greens and give a final toss! Your delicious garlic prawn udon noodles is ready to serve! Enjoy!
