Ingredients
  • Chicken Drumsticks - 5 to 6, skinless
  • Hung curd - 1 cup
  • Mustard oil - 2 to 3 tbsp
  • Garlic - 10 to 12 cloves, minced
  • Ginger paste - 2 tbsp
  • Kashmiri chilli powder - 2 tsp
  • Coriander powder - 2 tsp
  • Cumin powder - 1 tsp
  • Salt & black pepper to taste
  • Chat masala to sprinkle on top
Instructions
  1. Wash and pat dry the chicken drumsticks. Then make a cut at the thickest part of each drumstick. Set them aside while you prepare the marinade.
  2. To prepare the chicken kebab marinade, in a large bowl, add hung curd, mustard oil, minced garlic, ginger paste, Kashmiri red chilli powder, coriander powder, cumin powder and salt & black pepper to taste.
  3. Give everything a very good mix to make a homogenous mixture. Take time at this stage to ensure all powdered spices are evenly mixed and there is no lump.
  4. Drop the chicken drumsticks into this prepared marinade and coat them thoroughly so that they are thickly covered with the yogurt mixture on all sides.
  5. Once the chicken drumsticks are nicely coated, leave them marinated for at least 30 minutes. If you can preplan, then you can keep the chicken marinated even a night before!
  6. When you are ready to air fry your chicken kebab, start preheating your air fryer at 200 C / 400 F and set the timer for 25 minutes.
  7. After the air fryer is preheated, pull the basket out and brush or spray some oil at the bottom of the basket to ensure the chicken kebabs do not stick.
  8. Then place the marinated chicken drumsticks inside the basket in a single layer; do ensure the drumsticks are not on top of one another.
  9. Start air frying your chicken kebabs and after about 15 minutes flip them over. Then continue air frying them for the remaining time.
  10. Your air fryer chicken kebab will be ready in 25 minutes with nicely charred smokiness all around!*
  11. Take them out and serve with a sprinkling of chat masala on top and onion slices & lemon wedges on the side. Enjoy!
Notes
*Pro tip: You can check the doneness by cutting the thickest part of the chicken leg with the edge of a knife; if there is no trace of pink and juices run clear, your chicken kebab is perfectly cooked and ready to devour!
