Wash and pat dry the chicken drumsticks. Take them in a large mixing bowl.
In another small mixing bowl, add all the other ingredients - onion & garlic powder, Italian seasoning, extra virgin olive oil and salt & pepper to taste. Give a good mix to make a uniform marinade.
Pour the marinade over the chicken drumsticks. Then preferably using your hands, massage each drumstick with the marinating mixture to ensure each one is coated thoroughly on all sides.
Once you are happy with the marination, leave the chicken for at least 30 minutes at room temperature allowing the flavors to penetrate deep into the meat.
When you are ready to bake, preheat your oven to 190 C / 375 F and place the oven rack at upper third level.
Line a baking sheet with baking paper and spray it lightly with oil to avoid any sticking.
Now arrange the marinated chicken drumsticks on the baking sheet in a single layer.
Bake the drumsticks in the preheated oven for 20 minutes. Then take them out and brush olive oil over each piece. Flip the drumsticks over and brush olive oil on the other side too.
Return them back to the oven and bake for another 20 minutes or until the chicken is tender and juices run clear.**
Transfer the drumsticks to a platter and garnish with fresh herbs.
Serve the oven baked chicken drumsticks warm with a side of fresh salad and a spicy yogurt dip! Enjoy!

Pro tip: You can check the doneness of the chicken by poking the thickest part of the drumsticks with the edge of a sharp knife. If it cuts the meat easily and you don’t see any trace of pink and the juices run clear, your oven baked chicken drumsticks are completely cooked through.
