Bring a large pot of salted water to a rolling boil. Cook the egg noodles according to the package instructions until just al dente.
Drain them well and set aside in a colander. You can toss them with a teaspoon of oil to prevent sticking if they will sit for a while.
Heat the oil of your choice in a wok over medium heat.
Add the finely chopped onion and sauté for about 5 minutes, stirring occasionally, until softened and fragrant. The onion should turn translucent with light golden edges but should not brown.
Reduce the heat to low and add the red chilli powder. Stir continuously for about 30 seconds, just until the spice becomes fragrant. Be careful not to burn it, as burnt chilli powder will make the dish bitter.
While the onion is cooking, place the chilli garlic crisps, sugar, and finely chopped cilantro in a large heatproof mixing bowl. Give them a quick stir so the ingredients are evenly distributed.
Carefully pour the hot onion along with all the flavored oil into the bowl containing the chilli garlic crisps. The hot oil will intensify the aroma of the garlic, chillies, and cilantro. Mix everything thoroughly until well combined.
Add the cooked egg noodles to the bowl. Using tongs or two forks, gently toss the noodles until every strand is evenly coated with the aromatic chilli garlic mixture.
Pour in the dark soy sauce and oyster sauce. Toss again until the sauces are evenly mixed through the noodles, giving them a rich color and glossy finish.
Heat a tablespoon of flavorless oil in the same wok or a separate skillet over medium-high heat.
Add the shrimps and season them lightly with salt. Sauté for 2 to 3 minutes, turning once or twice, until the shrimp turn pink, opaque, and are just cooked through. Avoid overcooking to keep them juicy and tender.
Transfer the cooked shrimp to the noodles. Toss gently until the shrimp are evenly distributed throughout the noodles and coated in the flavorful chilli garlic sauce.
Serve the shrimp noodles in chilli garlic oil immediately while hot.
Garnish with extra chopped cilantro or a spoonful of chilli garlic crisps for added freshness, crunch, and heat. Enjoy!
