Making salsa is all about chopping! Let’s start by finely chopping the green and red capsicums which are also called bell peppers in some parts of the world.
Finely chop the onion. Finely chop the jalapeno.
Finely chop the fresh coriander leaves or cilantro.
Cut 1 lime into half and another one into wedges to serve with your salsa.
Now it’s time to assemble your mango salsa. Take a large mixing bowl and add the chopped mangoes.
Add the other chopped ingredients one by one - green and red capsicums, onion, jalapenos and coriander leaves.
Season the salsa with salt to taste.
Squeeze the juice of 1 lime over the assembled ingredients.
Now using a spatula, start mixing the mango salsa; be careful to use a light hand as you only want to mix the ingredients and not mash them.
Once all the ingredients are evenly mixed, cover the bowl with a plate or a plastic wrap and chill in the refrigerator for at least an hour before serving.
When you are ready to serve, arrange tortilla chips on a platter and serve a generous amount of mango salsa in a bowl.
Add the extra lime wedges on the side for a fresh squeeze of lime juice. Enjoy your mango salsa on a hot summer day!
