If there is one recipe that I can blindly vouch for helping me stick to my healthy eating habit, then that has to be this avocado toast! Topped with eggs, this avocado toast is not only the healthiest breakfast (or lunch!), but also the tastiest among all my other options!
Avocado is my new found love and I make sure I include this superfood in my meals at least twice a week!
I savor my avocados in various ways but the most common one is this avocado toast! I am wondering why I took so long to share this go-to recipe of mine!
Even though the title says this avocado toast is for breakfast, I will share my secret with you! I love this avocado toast so much that I have it for lunch at least thrice a week!
It is best paired with eggs if you want to have it for breakfast. For lunch with avocado toast, I usually pair it up with grilled/air fried chicken and loads of salad.
What is avocado toast?
As the name suggests, avocado toast is the most humble yet most delicious and nutritious meal of crunchy toast with mashed avocado spread over it!
The creamy avocado complements the crusty bread so beautifully that it creates an unforgettable eating experience that will keep dragging you to it again and again.
That’s why I repeat this avocado toast in my weekly meals so many times yet never get bored of it. And when you top it up with an egg, it’s just ten on ten with the right amount of protein & healthy fat.
Ingredients for Avocado toast with eggs
Avocado: The undisputed superhero of this show is none other than avocado!
This vibrant green nutritional powerhouse has gained immense popularity among the fitness enthusiasts of late and I too am rooting for it!
I don’t know how someone can not like this superfood! Yes, I know that avocado doesn’t taste anything naturally and that’s precisely the beauty of it!
That bland taste gives you a canvas for creating so many culinary excellence that it seems almost unbelievable!
Only recently I have shared my avocado pesto pasta recipe, another family favorite of ours, and it turned out to be a crowd pleaser!
Thanks to its creaminess, you can make avocado smoothie, avocado salad dressing cutting off the harmful mayo; you can make avocado spread which is what we are discussing today!
Egg: This complete protein is my choice of protein when I have this avocado toast for breakfast. In today’s recipe I showed you the sunny-side-up.
But that’s not the only way to add egg on your avocado toast. You can load up your toast with soft scrambled eggs or even soft boiled eggs sliced in rounds.
I also create another version of avocado egg toast where I chop up boiled eggs and mix with chopped avocado; then load this no-mayo creamy egg salad on top of the toast.
So in a nutshell what I want to say is that egg and avocado is a match made in heaven! Try it if you haven’t already!
Sourdough bread: Here you can play a little by choosing the bread that you like the most. Sourdough bread is my favorite as it has that hearty & chewy texture than the regular loaf of bread.
Plus, sourdough bread comes with more fiber and also is somewhat easy to digest thanks to its natural fermenting process.
It has a complex flavor with mild tanginess due to the slow fermentation over several hours and that’s what makes this bread more appetizing to me.
However, you can absolutely make this avocado toast with eggs using your regular bread; my only suggestion is to use the bread made with hundred percent wholewheat flour instead of all-purpose flour i.e. maida.
Chilli oil: This condiment is a special touch on your otherwise mild avocado toast. This is not mandatory of course but definitely adds a zing!
Chilli oil comes with bits of dried chilli flakes and chopped garlic which pack a punch into the oil and make anything taste better that it is added to.
You must try adding chilli oil not only to this avocado toast but also to your soups or stir fries; it takes your simple meals to another level!
Seasoning: Right seasoning is a must for your avocado toast! I know many are not fond of avocado because of its blandness.
But I am somehow sure they hadn’t tasted this superfood with the right amount of seasoning which makes all the difference!
Salt extracts the true taste from every food item which is why seasoning is the most important step to make any good recipe. Season your avocado toast right and you won’t forget this ever!
Lemon juice: This acidic drizzle is crucial to prevent the avocado from turning black and it also adds a delightful tanginess!
How to make avocado toast with eggs?
Step 1: First we will prepare the avocado mash. Cut the avocado into half lengthwise.
Step 2: Take out and discard the seed. Then scoop the flesh out using a spoon from each half of the avocado and take them in a bowl.
Step 3: Using a fork, mash the avocado to create a smooth avocado mash. Season it with salt and pepper to taste, drizzle the lemon juice and mix well. Set aside.
Step 4: Now take your sourdough bread and cut out thick slices of about 1-inch thickness.
Step 5: Heat a cast iron skillet over medium heat and add oil or butter to it. Then add the bread slices and toast both the sides until they are golden brown on each side. Take them out and set aside.
Step 6: In the same skillet, add a little more oil/butter and crack the eggs to make sunny-side-up! Cook the egg until the white firms up but the yolk still remains somewhat runny.
Step 7: Season the egg with salt to taste and pepper if you like. Take it out and set aside on a plate. Make another sunny-side-up similarly.
Step 8: Now it’s time to assemble! First take about two to three tablespoons of mashed avocado and spread it out evenly over each of the bread slices. Your avocado toast is ready!
Step 9: Then place one sunny-side-up on each avocado toast. Finally drizzle chilli oil over your eggs!
Step 10: Your avocado toast with eggs is ready to devour! Enjoy with your hot tea or coffee!
