Ingredients for high protein cottage cheese wrap
Cottage cheese: Let’s talk about this humble source of protein in detail!
If you are familiar with Indian cuisine, you may already know that cottage cheese is an integral part of Indian cooking and we dearly call it paneer.
But if you have seen videos of this cottage cheese wrap on social media, you must have noticed that the cottage cheese used here is much more soft and of a soupy texture.
Don’t get confused as I can assure you that our Indian paneer and this cottage cheese are one and the same thing!
Basically cottage cheese is nothing but curdled milk where an acidic substance like vinegar or lemon juice is added to the boiling milk to separate the milk solids and whey.
These separated milk solids are not integrated together but this texture is perfect for making this cottage cheese wrap.
On the other hand, to make the firm block of paneer that is used in various Indian curries, these separated milk solids are pressed using heavy pressure to create that firmness which doesn’t disintegrate when cooked in gravies.
In my recipe for cottage cheese wrap, I have made the cheese from scratch using two cups of milk which produces enough cheese for two wraps.
If you do not want to make the cheese from scratch, you can use store-bought paneer; just break them into small pieces before adding to the blender to ensure they are blended smooth.
Use about 150 grams of paneer to make two wraps.
As we know that milk or any milk product is a credible source of protein, this cottage cheese wrap too comes loaded with protein as it also contains eggs in the mixture.
Additionally you can load the wrap with more proteins like chicken or tofu and make it a powerhouse of a protein-packed meal ideal for lunch or dinner!
Egg: This is the only source of liquid to make the liquid wrap mixture; plus it upgrades the protein quotient even further in your cottage cheese wrap!
Eggs also help to keep the wrap intact while you roll it up thanks to its binding property while retaining the softness of the wrap.
Additionally, eggs also impart that vibrant golden color of the wrap making it supremely appetizing.
Seasoning: You must season the wrap mixture with salt and pepper to taste. Without the right seasoning, the final wrap won’t taste good even if you add extra seasoning to the filling.
Along with the general seasoning, you can also add garlic powder, onion powder and any other seasoning ingredient like chilli flake, paprika etc. to amp up the flavors of your cottage cheese wrap!
Filling: This part is completely customizable which is why I am not separately listing down the filling ingredients I used in my cottage cheese wrap.
You can load up your wrap with anything you like and here are few of my suggestions but the options are seriously limitless:
- Tomato, avocado and fresh herb (which is what I used in today’s recipe!)
- Grilled & shredded chicken with pickled onion & cucumber
- Sauteed shrimps with avocado and bell pepper slices
- Grilled chicken sausage, onion and peppers
- Grilled slices of tofu with avocado
How to make the cottage cheese wrap?
Step 1: First we will make cottage cheese at home. Boil half a liter or 2 cups of milk in a saucepan.
Step 2: When the milk starts to boil, switch off the flame and drizzle two tablespoons of vinegar and gently stir the milk to evenly mix it in.
Step 3: Milk will start to curdle immediately. Once the milk solids are separated and the clear whey is visible, your cottage cheese is ready.
Step 4: Place a fine mesh strainer over a bowl and pour the cottage cheese with whey into it; the whey will drain out and you will be left with your fresh homemade cottage cheese.
Step 5: Let the cottage cheese cool down for 15 minutes before proceeding to the next steps. Also start preheating your oven at 180 C / 350 F and place the wire rack at the center of the oven.
Step 6: Meanwhile, prepare a baking sheet by lining it with a parchment paper fully covering the base and then generously brush oil over the parchment paper.
Pro tip: This above step is extremely crucial; otherwise you won’t be able to peel out your cottage cheese wrap from your baking sheet and everything will stick really bad.
Step 7: Once the cottage cheese is cool enough to blend, add it to a blender. Then add the eggs, garlic & onion powder, salt and pepper to taste.
Step 8: Blend everything very nicely to make an absolutely smooth and silky pale yellow liquid mixture with no solid particles of cottage cheese.
Step 9: Pour the liquid over the lined baking tray and make an even layer over the parchment paper; you may need to tilt the baking sheet in different directions to spread the mixture.
Step 10: Bake the cottage cheese wrap mixture in a preheated oven for 30 minutes. You would not need to turn it over.
Step 11: After 30 minutes, the top of the wrap would turn golden brown as you can see from my pictures & video. Take the baking sheet out of the oven and let it cool down for at least 15 minutes.
Pro tip: Do not try to peel the wrap while it is hot; it will break and become unusable.
Step 12: Once the wrap is cool enough to handle, carefully pick it up from the baking sheet and gently peel the parchment paper from the bottom.
Step 13: Place the wrap on a cutting board and cut it into half to end up with two wraps. Take one wrap on the cutting board while setting aside another one.
Step 14: Now spread a couple of tablespoons of Greek yogurt over one of the shorter sides of the wrap. Then start placing the filling ingredients one by one.
Step 15: First place a few slices of tomato, then a few slices of avocado, you can also sprinkle a few thinly sliced onions.
Step 16: Then season them with salt & pepper tp taste. Finally add a burst of freshness by adding a few sprigs of fresh herbs like cilantro (aka coriander leaves) or parsley.
Step 17: Once you are happy with your wrap filling, all you are left to do is to wrap it up and enjoy! Don’t forget to prepare the remaining wrap similarly for your loved one!
