Step 1: Preheat your oven to 200 C / 400 F and place the wire rack at the middle of the oven.
Step 2: Now let’s make the hot & sweet glaze by stirring together honey, hot sauce of your choice and lemon juice in a small bowl. Make sure everything is evenly mixed and set aside.
Step 3: Next we will make the dry rub – in a small bowl, add the garlic powder, onion powder, chilli powder, salt and pepper. Give a good whisk to mix everything.
Step 4: It’s time to season the chicken with the dry rub. Take the chicken drumsticks in a large mixing bowl and sprinkle the dry rub all over the chicken.
Step 5: Give a good shake or using your hand, rub the dry seasoning over each drumstick making sure they are coated uniformly on all sides.
Step 6: Line a baking sheet with parchment paper. Place the chicken drumsticks on the baking sheet and bake for 20 minutes in the preheated oven.
Step 7: After about 20 minutes, take the baking sheet out and using a silicone brush, smoothly brush the hot honey sauce all over the chicken drumsticks.
Step 8: Return the baking sheet to the oven and bake for another 10 minutes. Then take them out, flip each chicken over, brush them again with the sauce and bake for another 10 minutes.
Pro tip 1: The chicken should be completely cooked through after 40 to 45 minutes of baking, or when an instant read thermometer inserted into the thickest part of the drumstick reaches 80 C / 175 F.
Pro tip 2: For a more charred-on-the-edges look of your hot honey chicken drumsticks, you can broil them for 4 to 5 minutes shifting the wire rack to the top-most level of the oven and switching on the broil mode.
Pro tip 3: If you have any leftover sauce, you can brush the chicken one last time before broiling them. Do NOT use this leftover sauce as dipping sauce as it was touched with raw chicken during repeated brushing and hence can be contaminated.
Step 9: Take the hot honey chicken drumsticks out of the oven, let them rest for a few minutes and then serve with fresh lime wedges. Enjoy!
