What is Chicken Tawa Fry?
Chicken tawa fry is a rustic Indian-style chicken preparation where bite-sized pieces of chicken are cooked on a wide, flat tawa along with thick, intensely flavored spices.
Unlike deep-fried chicken, this recipe uses very little oil and relies on the hot tawa to caramelize the onions, cook down the spices and give the chicken beautifully browned edges.
There are many regional and street-style versions of tawa chicken, but this one has my own Flavor Quotient twist!
The combination of mustard oil, fresh ginger-garlic-green chilli paste, pav bhaji masala and tamarind gives this chicken an incredibly flavorful, slightly tangy and wonderfully aromatic makeover.
And honestly, the best part is the final spoonful of ghee! It brings everything together and gives the chicken tawa fry that irresistible finishing touch.

Ingredients for Chicken Tawa Fry
Chicken: For a restaurant style chicken tawa fry, I highly recommend using boneless, skinless chicken thighs for this recipe.
Chicken thighs have a higher fat content than chicken breast, which helps them stay juicy and tender while cooking on the tawa.
Cut the chicken into approximately 1-inch cubes so that they cook evenly and absorb plenty of the spices.
You can substitute chicken breast if you prefer, but be careful not to overcook it as breast meat tends to dry out much faster.
Mustard oil: Mustard oil is an important part of the flavor profile here. Its distinctive pungent aroma works beautifully with the spicy masala and gives the chicken that unmistakable Indian character.
Make sure you heat the mustard oil well before adding the onions to mellow out its raw pungency.
Pav bhaji masala: This classic spice mix might seem like an unexpected ingredient in a chicken recipe, but trust me on this! Its blend of spices adds incredible depth and a subtle street-food-style flavor to the chicken.
It works especially well with the tanginess from the tamarind and the sweetness of the caramelized onions.

Ginger: Fresh ginger adds a warm, slightly peppery aroma and a subtle sharpness to the spices. It works particularly well with chicken and helps balance the richness of the caramelized onions and ghee.
Garlic: This recipe uses a generous amount of fresh garlic, and that is exactly what makes the spices so aromatic!
Some garlic goes into the ginger-garlic-green chilli paste while additional whole cloves are cooked with the onions. The result is a deep, savory garlic flavor that gets beautifully mellow and slightly sweet as it cooks.

Turmeric contributes an earthy aroma and vibrant golden color, while Kashmiri red chilli powder gives the dish its gorgeous red hue along with a gentle chilli flavor without making the dish excessively spicy.
Together, they create the beautiful base color of the chicken tawa fry.
Tomato: Tomato adds moisture, mild acidity and a touch of natural sweetness to the spices.
Cook it until completely soft and mushy so that it blends into the caramelized onion mixture rather than remaining as separate pieces.
The tomato also helps create that thick, clingy gravy that coats every piece of chicken.
Fresh Coriander Leaves: This fresh herb adds a burst of freshness to this otherwise rich and intensely spiced chicken.
It is used both in the aromatic green paste and as a finishing herb, so its flavor runs through the dish from beginning to end.

How to Make Chicken Tawa Fry?
Step 1: First we will make the fresh green paste. Add garlic cloves, ginger, green chillies and chopped fresh coriander leaves to a mixer grinder.
Step 2: Add just a very small amount of water and grind everything into a smooth, fine paste. Set aside.
Pro Tip: Avoid adding too much water. A thick paste is ideal because you want the aromatics to fry and caramelize rather than boil.
Step 3: Next we will marinate the chicken. Cut the boneless, skinless chicken thighs into approximately 1-inch cubes and transfer them to a bowl.
Step 4: Add salt, a pinch of turmeric powder and a tablespoon of the prepared ginger-garlic-green chilli paste.
Step 5: Mix everything thoroughly so that the chicken is evenly coated. Set aside while you prepare the curry base.
Step 6: Place a large tawa or griddle over high heat and add the mustard oil. Allow the oil to become properly hot before adding the onions.
Step 7: Add the finely chopped onions and stir well. Reduce to medium-high heat and cook the onions patiently until they turn light golden brown.
This step is important because the caramelized onions form the base of the chicken tawa fry.
Step 8: Once the onions start turning golden, add the remaining ginger-garlic-green chilli paste along with the whole garlic cloves.
Step 9: Continue cooking over medium-high heat, stirring frequently, until the onions become deeply golden and the raw aroma of the ginger and garlic disappears.
Pro Tip: If the spices start sticking to the tawa or becomes too dry, add a small splash of hot water and continue cooking.
Step 10: Reduce the heat and add turmeric powder, Kashmiri red chilli powder and pav bhaji masala. Add a splash of hot water and mix everything well.
Step 11: Increase the heat and cook the spices for 1–2 minutes, stirring continuously. This helps the spices bloom and become beautifully aromatic.
Step 12: Next add the chopped tomato and season with salt. Mix well and cook until the tomatoes become completely soft and mushy and blend into the onion mixture.
Step 13: Again, add small splashes of hot water whenever needed to prevent the spices from sticking or burning. You want to end up with a thick, intensely flavored curry base.
Step 14: Add a teaspoon of tamarind paste and mix it thoroughly into the curry. Cook for another minute so that the tanginess gets incorporated into the spices.
Step 15: Now it’s time to add the marinated chicken. Spread the marinated chicken pieces evenly over the tawa.
Step 16: Let the chicken cook undisturbed over medium heat for 2–3 minutes. This allows the underside to sear and develop some beautiful browning.
Step 17: Flip each piece of chicken and cook for another 2–3 minutes. By now, the chicken should start developing browned edges while the spices cling to the pieces.
Step 18: Once the chicken has browned, reduce the heat and let it cook slowly for another 10–12 minutes. Stir occasionally, making sure every piece gets coated with the spices.
The chicken should be cooked through while remaining juicy, and the curry should become thick and cling beautifully to the chicken.
Step 19: Once the chicken is cooked, add a tablespoon of ghee and a handful of freshly chopped coriander leaves. Give everything one final toss.
Step 20: That’s it! Your delicious chicken tawa fry is ready. Serve it with a butter toasted pav and enjoy!
