The day I made these gorgeous Mediterranean chicken kabobs, these were the only thing we ate without touching anything else on the table! There were so good!
All you need to do to make these Mediterranean chicken kabobs is to marinate the boneless chicken cubes, chicken breast or thighs, and veggies in an herb-loaded olive oil based marinate for few hours; then skewer them up and grill!

I got introduced to this enticing cuisine during my first visit to Greece about 5 years ago. While reading about Greek food and culture, I got introduced to various Greek delicacies which are part of the vast Mediterranean cuisine and immediately fell in love with them.
I was loving and happily living on Greek salads, Gyros, Souvlakis, Moussakas and Kleftiko during my short stay there even though those are way different from a typical Indian meal.
I so wished I had a longer stay! The freshness of Mediterranean food is what primarily attracted me and eventually I got hooked to them as I explored more.

Thankfully these Mediterranean chicken kabobs are very easy to make like my all other recipes. For making these awesome kabobs, you will need, of course, some chicken & veggies and some bunch of herbs.
Now, if you happen to live in the Mediterranean region, then no one is luckier than you! Why you ask?
Simply because you can use all the fresh herbs which are available in abundance there! Trust me, there is nothing more rejuvenating than the aroma of fresh herbs.
Because of our love for all kinds of herbs, we do have a small herb garden which provides enough for garnishing or sprinkling a little on top, but for this recipe of Mediterranean chicken kabobs, you need a lot. Hence, I had to resort to dried herbs but thankfully we were not disappointed.
If you use the dried herbs appropriately, you would be able to make these gorgeous Mediterranean chicken kabobs very easily at home.
I like full burst of herby flavors which is why I used 2 teaspoons of dried oregano and 1 teaspoon of dried thyme for half a kilo of chicken; it may seem a lot but trust me, you need this.
Additionally, I used same ratio of dried oregano & thyme for my veggies which include a red bell pepper, a green bell pepper, a zucchini and a large onion. Yes, this recipe of Mediterranean chicken kabobs is all about herbs which are best complemented with a good quality of olive oil.
I have also used paprika for a sweet & spicy kick, but feel free to adjust its amount as per your liking. And to round everything up, you will definitely need a dash of red wine vinegar which is one of the most popular Mediterranean condiments.

- Chicken thighs – 500 gms, boneless & skinless
- Olive oil – ¾ cup
- Garlic – 10 cloves, minced
- Dried oregano – 2 tsp
- Dried thyme – 1 tsp
- Paprika – 2 tsp
- Red wine vinegar – 1 tbsp
- Juice of 1 lemon
- Salt – 1 tsp
- Freshly crushed pepper – 1 tsp
- Green bell pepper – 1
- Red bell pepper – 1
- Zucchini – 1
- Onion – 1, large
- Olive oil – ½ cup
- Garlic – 10 cloves, minced
- Dried oregano – 2 tsp
- Dried thyme – 1 tsp
- Paprika – 2 tsp
- Red wine vinegar – 1 tbsp
- Juice of 1 lemon
- Salt – 1 tsp
- Freshly crushed black pepper – 1 tsp
- Cut the boneless & skinless chicken thighs into 1-inch long cubes. Take the chicken cubes in a bowl.
- Add all the other ingredients listed under chicken into the same bowl and give everything a good mix making sure the chicken pieces are thoroughly coated with the herb-loaded olive oil.
- Cover the bowl with a plastic wrap and let it marinate for couple of hours in the refrigerator.
- Cut each of the bell peppers into 1-inch squares. Cut the zucchini into 1-cm thick circles. Cut the onions into 1-inch chunks and separate the petals. Wash the veggies well and drain all water out. Make sure the veggies are as dry as possible.
- Take the veggies in a large bowl and add all other ingredient listed under veggies to the same bowl. Give everything a good mix.
- Cover the bowl with a plastic wrap and let them marinate for couple of hours in the refrigerator.
- When you are ready to grill, heat a grill pan until smoking hot. Brush some olive oil over the pan.
- Thread the chicken pieces and veggies alternatively into each bamboo skewer creating a stunning visual appeal. Reserve the left over marinate which will be used for basting the chicken kabobs while grilling.
- Place the threaded skewers on hot grill and leave them undisturbed for 2 minutes on high heat. Keep brushing the kabobs with left over marinate.
- Flip the skewers over after 2 minutes and let the other side grill on high heat for another 2 minutes while continuously basting the skewers with marinating liquid.
- After 2 minutes, lower the heat to medium and continue to cook the kabobs for 10 to 15 minutes flipping frequently in between until they are completely cooked on all sides. If you are using chicken breast, it will take much less time to cook.
- Once the kabobs are cooked through, switch off the flame. Serve the Mediterranean chicken kabobs on a platter with spicy mayo on the side. Enjoy!
